Ingredients

  • 2 large Oranges
  • 2 large Lemons
  • 1 large Grapefruit
  • 6 cups Granulated sugar
  • 8 cups Water

Directions

Step 1

Wash the oranges, lemons, and grapefruit thoroughly under cold water to remove any wax or impurities.

Step 2

Use a vegetable peeler or sharp knife to remove the zest (outer skin) of the fruits, avoiding the bitter white pith. Slice the zest into thin strips.

Step 3

Peel the fruits completely, removing and discarding the white pith. Separate the flesh into segments and remove any seeds.

Step 4

Chop the fruit segments into small pieces, ensuring to collect the juices as you cut.

Step 5

In a large, heavy-bottomed pot, combine the fruit zest, chopped fruit, juice, and 8 cups of water. Stir to combine.

Step 6

Bring the mixture to a boil over medium-high heat. Reduce the heat to low and simmer uncovered for 45 minutes, stirring occasionally.

Step 7

Add the sugar to the pot and stir until fully dissolved. Increase the heat to medium and bring the mixture to a rolling boil.

Step 8

Boil the marmalade, stirring frequently, for about 30–40 minutes or until the mixture reaches 220°F (105°C) on a candy thermometer or passes the wrinkle test on a cold plate.

Step 9

Remove the pot from the heat and let the marmalade sit for 5 minutes to allow the fruit to distribute evenly.

Step 10

Carefully ladle the hot marmalade into sterilized jars, leaving about 1/4 inch of headspace. Wipe the rims clean, secure the lids, and process the jars in a boiling water bath for 10 minutes if you wish to store them for long-term use.

Step 11

Let the jars cool to room temperature. Check the seals and store in a cool, dark place for up to one year. Refrigerate after opening.
