Ingredients

  • 1.5 cups All-purpose flour
  • 2 tablespoons Granulated sugar
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Baking soda
  • 0.25 teaspoons Salt
  • 1.25 cups Buttermilk
  • 1 large Egg
  • 3 tablespoons Unsalted butter (melted)
  • 2 tablespoons Fresh lemon juice
  • 1 teaspoon Lemon zest (finely grated)
  • 1 cup Fresh heavy cream
  • 0.5 cups Mascarpone cheese
  • 2 tablespoons Powdered sugar
  • 1 teaspoon Vanilla extract
  • 1 tablespoon Vegetable oil or butter (for greasing the griddle)

Directions

Step 1

In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.

Step 2

In a separate bowl, combine the buttermilk, egg, melted butter, lemon juice, and lemon zest. Whisk until well blended.

Step 3

Pour the wet ingredients into the dry ingredients. Stir gently until just combined. Avoid overmixing to keep the batter light.

Step 4

Preheat a griddle or non-stick skillet over medium heat. Lightly grease with vegetable oil or butter.

Step 5

Scoop about 1/4 cup of batter onto the heated griddle for each griddle cake, spreading slightly with the back of a spoon if needed.

Step 6

Cook until bubbles form on the surface and the edges appear set, about 2-3 minutes. Flip and cook for an additional 1-2 minutes, or until both sides are golden brown. Remove from heat and repeat with the remaining batter.

Step 7

To make the Devonshire cream, whip the heavy cream in a clean mixing bowl until soft peaks form.

Step 8

In another bowl, mix the mascarpone cheese, powdered sugar, and vanilla extract until smooth. Fold the whipped cream into the mascarpone mixture until fully combined.

Step 9

Serve the griddle cakes warm with a dollop of Devonshire cream on top. Optionally, garnish with fresh lemon zest or a drizzle of honey.
