Ingredients

  • 2 tablespoons Olive oil
  • 1 medium Yellow onion
  • 2 medium Carrots
  • 2 medium Celery stalks
  • 56 ounces Whole peeled tomatoes (canned)
  • 4 cups Chicken broth
  • 1 cup Heavy cream
  • 1 cup Fresh basil leaves
  • 2 teaspoons Sugar
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Finely chop the onion, carrots, and celery. Add them to the pot and sauté for 8-10 minutes, stirring occasionally, until softened and fragrant.

Step 3

Add the canned tomatoes, including their juice, and break them apart with a wooden spoon or spatula.

Step 4

Pour in the chicken broth and stir to combine. Bring the mixture to a boil, then reduce the heat to low and simmer for 30 minutes.

Step 5

Use an immersion blender to puree the soup directly in the pot, or carefully transfer the soup to a countertop blender in batches and blend until smooth. Return the soup to the pot if using a countertop blender.

Step 6

Stir in the heavy cream, fresh basil leaves, sugar, salt, and black pepper. Simmer for an additional 5 minutes to let the flavors meld together.

Step 7

Taste and adjust the seasoning as necessary. Add more salt, pepper, or sugar if desired.

Step 8

Serve the soup hot, garnished with extra basil leaves, a drizzle of cream, or croutons, if desired.
