Ingredients

  • 250 grams spaghetti or other long noodles
  • 100 grams walnuts
  • 3 tablespoons olive oil
  • 2 pieces garlic cloves
  • 50 grams parmesan cheese, grated
  • 2 tablespoons fresh parsley, chopped
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 0.25 teaspoons red pepper flakes (optional)
  • 2 liters water for boiling

Directions

Step 1

Bring a large pot of salted water to a boil, then cook the spaghetti according to package instructions. Reserve 1/2 cup of pasta water before draining the noodles.

Step 2

While the pasta cooks, toast the walnuts in a dry skillet over medium heat for 3-4 minutes, stirring frequently, until fragrant and lightly browned. Remove from heat and roughly chop the walnuts. Set aside.

Step 3

In the same skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1-2 minutes, until fragrant but not browned.
