Ingredients

  • 250 grams noodles (spaghetti or fettuccine)
  • 2 tablespoons olive oil
  • 3 pieces garlic cloves
  • 2 tablespoons fresh parsley
  • 2 tablespoons fresh basil
  • 1 tablespoon fresh oregano
  • 1 tablespoon lemon juice
  • 50 grams grated Parmesan cheese
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon red chili flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the noodles according to the package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta cooking water.

Step 2

While the noodles cook, finely mince the garlic and chop the fresh parsley, basil, and oregano.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Step 4

Add the cooked noodles to the skillet and toss to coat them in the garlic-infused olive oil.

Step 5

Stir in the parsley, basil, and oregano, reserving a small amount of each herb for garnish.

Step 6

Add the lemon juice and about 2-3 tablespoons of the reserved pasta cooking water to loosen the noodles if needed.

Step 7

Season with salt, black pepper, and red chili flakes (if using). Toss everything together until well combined.

Step 8

Remove the skillet from the heat and sprinkle the grated Parmesan cheese over the noodles. Toss everything once more until the cheese is melted and evenly distributed.

Step 9

Transfer the noodles to serving plates and garnish with the reserved fresh herbs. Serve immediately and enjoy!
