Press the tofu to remove excess water by placing it between paper towels or a clean kitchen cloth and setting a heavy object on top for 15 minutes.
Cut the pressed tofu into small cubes and toss them in a bowl with cornstarch until evenly coated.
Heat 1 tablespoon of cooking oil in a non-stick skillet over medium heat. Add the tofu cubes and pan-fry them for 6-8 minutes, turning occasionally, until golden and crispy on all sides. Remove the tofu from the pan and set aside.
Cook the noodles according to the package instructions. Drain and set aside.
In a small bowl, mix together soy sauce, sesame oil, water, and grated ginger. Set the sauce mixture aside.
In the same skillet used for tofu, add the remaining 1 tablespoon of cooking oil. Over medium heat, sauté minced garlic for 1-2 minutes until fragrant.
Add the fresh spinach to the skillet and cook for 2-3 minutes until wilted.
Add the cooked noodles and tofu back into the skillet, then pour the sauce mixture over the top. Toss everything together for 2-3 minutes until the noodles are evenly coated and warmed through.
Transfer the noodles and spinach with tofu to serving plates, garnish with green onions and sesame seeds if desired, and serve immediately.
