  • 1 teaspoon Black pepper
  • 0.5 cup All-purpose flour
  • 1 large Yellow onion, diced
  • 4 cloves Garlic cloves, minced
  • 0.5 cup Dry white wine
  • 28 oz Crushed tomatoes
  • 1 cup Chicken broth
  • 0.75 cup Kalamata olives, pitted and halved
  • 3 tablespoons Capers
  • 2 tablespoons Fresh oregano, chopped
  • 2 tablespoons Fresh basil leaves, chopped
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

Season the chicken thighs with 1 teaspoon of salt and 1 teaspoon of black pepper. Lightly dredge them in the all-purpose flour, shaking off any excess.

Step 2

Heat 2 tablespoons of olive oil in a large skillet or Dutch oven over medium-high heat. Sear the chicken thighs skin-side down until golden brown and crispy, about 5 minutes. Flip and cook the other side for another 3 minutes. Remove the chicken from the skillet and set aside.

Step 3

Lower the heat to medium and add the remaining 1 tablespoon of olive oil to the skillet. Add the diced onion and sauté until soft and translucent, about 5 minutes. Stir in the minced garlic and cook for 1 minute until fragrant.

Uncover the skillet and continue to simmer for an additional 10 minutes to allow the sauce to thicken slightly.

Step 8

Remove from heat and stir in the fresh basil. Taste the sauce and adjust salt and pepper as needed.

Garnish with fresh parsley and serve hot over pasta, polenta, or with a crusty loaf of bread.
