Ingredients

  • 1.5 cups Arborio rice
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 1 medium Yellow onion, finely chopped
  • 2 large Garlic cloves, minced
  • 4 cups Chicken or vegetable stock
  • 0.5 cups Dry white wine
  • 0.75 cups Parmesan cheese, freshly grated
  • 2 tablespoons Fresh parsley, finely chopped
  • 1 teaspoon Salt
  • 0.25 teaspoon Black pepper, freshly ground

Directions

Step 1

In a medium saucepan, heat the chicken or vegetable stock over low heat. Keep it warm but not boiling throughout the cooking process.

Step 2

In a large, heavy-bottomed skillet or saucepan, heat the olive oil and butter over medium heat until the butter is melted and bubbly.

Step 3

Add the finely chopped onion to the pan and sauté for 3-4 minutes until softened and translucent, stirring occasionally.

Step 4

Stir in the minced garlic and cook for an additional 1 minute, ensuring the garlic doesn’t burn.

Step 5

Add the Arborio rice to the pan and stir to coat each grain with the oil and butter mixture. Toast the rice for 2-3 minutes, stirring frequently, until the edges of the grains are translucent.

Step 6

Pour in the dry white wine and stir continuously until the liquid is mostly absorbed.

Step 7

Begin adding the warm stock to the rice, one ladleful (about 1/2 cup) at a time. Stir constantly, allowing the stock to be absorbed before adding the next ladleful. Continue this process for about 18-20 minutes, or until the rice is tender but still slightly al dente.

Step 8

Once the rice is cooked to your preference, stir in the Parmesan cheese, salt, and black pepper. Adjust seasoning to taste.

Step 9

Remove the pan from heat and fold in the chopped parsley. Let the dish rest for a minute before serving.

Step 10

Serve warm, garnished with additional Parmesan cheese and parsley if desired. Enjoy Nonna Luna's Rice as a comforting standalone dish or pair it with your favorite protein or vegetables.
