Ingredients

  • 2 cups All-purpose flour
  • 0.75 cups Granulated sugar
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Salt
  • 0.5 cups Unsalted butter, cold and cubed
  • 0.75 cups Ricotta cheese
  • 1 large Egg
  • 1 tablespoon Lemon zest
  • 2 tablespoons Lemon juice, freshly squeezed
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Powdered sugar (for dusting, optional)

Directions

Step 1

Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone baking mat.

Step 2

In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt until well combined.

Step 3

Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or your fingertips to cut the butter into the flour mixture until it resembles coarse crumbs.

Step 4

In a separate medium bowl, whisk together the ricotta cheese, egg, lemon zest, lemon juice, and vanilla extract until smooth.

Step 5

Make a well in the center of the dry ingredients and pour in the wet mixture. Gently mix using a spatula or wooden spoon until a soft dough forms. Be careful not to overmix.

Step 6

Using a cookie scoop or two spoons, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.

Step 7

Bake in the preheated oven for 14-16 minutes, or until the edges are lightly golden and the tops are set.

Step 8

Remove the biscuits from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Once cooled, dust the biscuits with powdered sugar (optional) for a touch of sweetness and presentation.

Step 10

Serve the biscuits as-is, or pair them with tea, coffee, or fresh fruit for a wholesome treat.
