Ingredients

  • 2 cups All-purpose flour
  • 0.5 cup Unsweetened cocoa powder
  • 1.5 teaspoons Baking soda
  • 0.5 teaspoons Salt
  • 0.5 cup Unsalted butter
  • 1.75 cups Granulated sugar
  • 2 large Eggs
  • 2 teaspoons Vanilla extract
  • 1 cup Sour cream
  • 0.5 cup Hot water
  • 1 cup Brown sugar
  • 0.25 cup Unsalted butter (for icing)
  • 2 tablespoons Milk
  • 1.5 cups Powdered sugar
  • 1 teaspoon Vanilla extract (for icing)

Directions

Step 1

Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking pan or two 8-inch round cake pans. Dust with flour and tap out any excess.

Step 2

In a medium bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.

Step 3

In a large mixing bowl, cream the butter and sugar together with an electric mixer until light and fluffy, about 2-3 minutes.

Step 4

Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.

Step 5

Reduce mixer speed to low and alternately add the dry ingredients and sour cream to the wet ingredients in 3 additions, beginning and ending with the dry ingredients.

Step 6

Carefully mix in the hot water until the batter is smooth. Do not overmix.

Step 7

Pour the batter into the prepared pan(s) and smooth the top with a spatula.

Step 8

Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Remove from the oven and allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Step 9

To prepare the icing, combine the brown sugar, butter, and milk in a small saucepan over medium heat. Bring the mixture to a gentle boil and stir until the sugar is dissolved, about 2 minutes.

Step 10

Remove from heat and let the mixture cool slightly, about 5 minutes.

Step 11

Gradually whisk in the powdered sugar and vanilla extract until smooth and spreadable. If the icing becomes too thick, add a teaspoon of milk at a time to reach the desired consistency.

Step 12

Spread the icing evenly over the cooled cake. Allow the icing to set for at least 20 minutes before slicing and serving.
