Ingredients

  • 300 grams All-purpose flour
  • 100 grams Granulated sugar
  • 150 grams Unsalted butter, cold and diced
  • 2 large Egg yolks
  • 1 large Whole egg
  • 1 teaspoon Lemon zest
  • 1 teaspoon Vanilla extract
  • 1 pinch Salt
  • 300 grams Fruit preserves (e.g., apricot, raspberry, or mixed berry)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour, granulated sugar, and a pinch of salt.

Step 2

Add the cold, diced butter to the dry ingredients and work it in with your fingers or a pastry cutter until the mixture resembles coarse crumbs.

Step 3

In a separate bowl, whisk together the egg yolks, whole egg, lemon zest, and vanilla extract.

Step 4

Create a well in the center of the flour mixture and pour in the egg mixture. Mix gently until the dough comes together. Do not overwork the dough.

Step 5

Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes to rest.

Step 6

Preheat your oven to 180°C (350°F). Grease a 9-inch (23 cm) tart pan with a removable bottom.

Step 7

Remove the dough from the fridge and divide it into two portions, one slightly larger than the other.

Step 8

On a floured surface, roll out the larger portion of dough to fit the bottom and sides of the tart pan. Press it gently into the pan and trim any excess dough.

Step 9

Spread the fruit preserves evenly over the crust in the tart pan.

Step 10

Roll out the remaining dough and, using a knife or pastry cutter, cut it into strips about 1/2-inch wide.

Step 11

Carefully arrange the strips over the jam in a lattice pattern, pressing the edges to seal them to the crust.

Step 12

Bake the crostata in the preheated oven for 35-40 minutes, or until the crust is golden brown.

Step 13

Remove from the oven and allow the crostata to cool completely before removing from the pan and serving.
