Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 4 cloves garlic, minced
  • 2 medium carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 2 medium russet potatoes, peeled and diced
  • 1 pound chicken breast, cubed
  • 6 cups low-sodium chicken broth
  • 14.5 ounces canned diced tomatoes
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 2 tablespoons fresh parsley, chopped (optional)

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Add the diced onion and garlic to the pot, sautéing for 3-4 minutes until softened and fragrant.

Step 3

Stir in the sliced carrots, celery, and diced potatoes. Cook for another 5 minutes, stirring occasionally.

Step 4

Add the cubed chicken to the pot and cook, stirring frequently, until the chicken is just starting to brown, about 5 minutes.

Step 5

Pour in the chicken broth and canned diced tomatoes (including their liquid). Stir to combine.

Step 6

Add the bay leaf, dried thyme, paprika, salt, and ground black pepper. Stir well.

Step 7

Bring the soup to a gentle boil, then reduce the heat to low and let it simmer for 25-30 minutes, or until the potatoes are tender and the chicken is cooked through.

Step 8

Remove the bay leaf from the pot and discard.

Step 9

Taste the soup and adjust seasonings if necessary, adding more salt or pepper to taste.

Step 10

Ladle the soup into bowls, garnish with chopped fresh parsley if desired, and serve warm.
