  • 6 large Roma tomatoes
  • 2 medium Jalapeño peppers
  • 1 medium Serrano peppers
  • 1 medium Red onion
  • 3 large Garlic cloves
  • 0.5 cup Fresh cilantro
  • 1 large Lime
  • 1 teaspoon Smoked paprika
  • 1 teaspoon Ground cumin
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat a skillet or grill pan over medium-high heat.

Place the Roma tomatoes, jalapeño peppers, serrano pepper, and unpeeled garlic cloves on the skillet. Roast them for 8-10 minutes, turning occasionally, until the skins are charred and blistered.

Remove the vegetables from the skillet. Allow them to cool slightly, then peel the garlic and remove the stems from the peppers. For less heat, remove the seeds from the peppers as well.

In a food processor or blender, add the roasted tomatoes, peppers, peeled garlic, red onion (cut into quarters), and fresh cilantro.
