Ingredients

  • 4 medium Yukon Gold potatoes
  • 1 medium Yellow onion
  • 2 large Eggs
  • 3 tablespoons All-purpose flour

  • 0.5 teaspoon Baking powder
  • 0 Olive oil cooking spray

Directions

Step 1

Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper and lightly spray it with olive oil cooking spray.

Step 2

Peel the potatoes and roughly chop them into 1-inch chunks. Cut the onion into quarters.

Step 3

Add the potato chunks and onion pieces to a food processor. Pulse several times until the mixture is finely chopped but not pureed. Stop to scrape down the sides as needed.

Step 4

Transfer the potato-onion mixture to a large mixing bowl. Pour off any excess liquid that gathers at the bottom of the bowl.

In a small bowl, beat the eggs, then add them to the mixing bowl with the potatoes and onions.
