Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper and lightly spray it with olive oil cooking spray.
Peel the potatoes and roughly chop them into 1-inch chunks. Cut the onion into quarters.
Add the potato chunks and onion pieces to a food processor. Pulse several times until the mixture is finely chopped but not pureed. Stop to scrape down the sides as needed.
Transfer the potato-onion mixture to a large mixing bowl. Pour off any excess liquid that gathers at the bottom of the bowl.
In a small bowl, beat the eggs, then add them to the mixing bowl with the potatoes and onions.
Stir in the flour, salt, pepper, and baking powder. Mix until everything is evenly combined.
Using a spoon or measuring cup, scoop about 2 tablespoons of the mixture and place it onto the prepared baking sheet. Flatten it slightly with the back of the spoon to form a patty. Repeat with the remaining mixture, spacing the latkes about 1 inch apart.
Lightly spray the tops of the latkes with olive oil cooking spray.
Bake for 12 minutes, then carefully flip each latke using a spatula. Spray the tops lightly again with cooking spray and bake for another 10-13 minutes, or until golden brown and crisp.
Remove the latkes from the oven and let them cool for 2-3 minutes on the baking sheet before transferring to a serving plate.
Serve warm with sour cream, applesauce, or your favorite dipping sauce for a perfect no-fat alternative to traditional latkes.
