Ingredients

  • 1.5 cups All-purpose flour
  • 0.5 cups Rolled oats
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoons Salt
  • 2 large Egg whites
  • 1 cup Unsweetened applesauce
  • 0.25 cups Honey
  • 1 teaspoon Vanilla extract
  • 1 cup Grated apple (peeled)
  • 1 cup Grated carrot

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or spray with non-stick spray.

Step 2

In a large bowl, combine the all-purpose flour, rolled oats, baking powder, baking soda, ground cinnamon, and salt. Mix well and set aside.

Step 3

In a separate medium bowl, whisk together the egg whites, unsweetened applesauce, honey, and vanilla extract until thoroughly combined.

Step 4

Gradually fold the wet ingredients into the bowl of dry ingredients. Stir gently until just combined. Be careful not to overmix.

Step 5

Fold in the grated apple and grated carrot until evenly distributed throughout the batter.

Step 6

Using a spoon or ice cream scoop, divide the batter evenly among the 12 prepared muffin cups, filling each cup about 2/3 full.

Step 7

Bake in the preheated oven for 20-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Remove the muffins from the oven and let them cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Enjoy the muffins fresh or store them in an airtight container at room temperature for up to 3 days. They can also be refrigerated or frozen for longer storage.
