Ingredients

  • 4 pieces Chicken breasts
  • 1 cup Lump crab meat
  • 0.5 cup Breadcrumbs
  • 0.25 cup Parmesan cheese
  • 2 tablespoons Fresh parsley, chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Lemon zest
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Paprika
  • 8 pieces Toothpicks

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Carefully butterfly the chicken breasts by slicing them horizontally but not all the way through, creating a pocket.

Step 3

In a medium bowl, combine the crab meat, breadcrumbs, Parmesan cheese, parsley, garlic, lemon zest, and 1 tablespoon of olive oil. Mix well to create the stuffing.

Step 4

Season the crab stuffing with half of the salt and pepper, mixing to combine.

Step 5

Spoon an equal amount of the crab stuffing into each chicken breast pocket. Close the chicken breasts and secure the edges with toothpicks to keep the stuffing inside.

Step 6

Brush the outside of the chicken breasts with the remaining olive oil, then season evenly with the paprika, the remaining salt, and black pepper.

Step 7

Heat a large oven-safe skillet over medium-high heat. Sear the stuffed chicken breasts for 2-3 minutes on each side until golden brown.

Step 8

Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).

Step 9

Remove the skillet from the oven and let the chicken rest for 5 minutes. Carefully remove the toothpicks before serving.

Step 10

Serve the crab-stuffed chicken breasts warm with your choice of side dishes, such as steamed vegetables or a fresh salad.
