Ingredients

  • 12 pounds whole turkey
  • 1 tablespoon kosher salt
  • 1 teaspoon black pepper
  • 4 tablespoons unsalted butter
  • 4 cloves garlic
  • 3 sprigs fresh rosemary
  • 5 sprigs fresh thyme
  • 1 whole yellow onion
  • 1 whole carrot
  • 1 whole celery stalk
  • 2 cups chicken broth
  • 2 tablespoons olive oil

Directions

Step 1

Preheat your oven to 325°F (165°C).

Step 2

Remove the turkey from its packaging, pat it dry with paper towels, and remove the neck and giblets from the cavity.

Step 3

Rub the entire turkey generously with kosher salt and black pepper, ensuring even coverage both inside and outside the cavity.

Step 4

Peel and gently crush the garlic cloves. Stuff the cavity of the turkey with the garlic, rosemary sprigs, thyme sprigs, and the quartered onion.

Step 5

Roughly chop the carrot and celery. Arrange these vegetables along with the chicken broth in the bottom of a large roasting pan to act as a flavor base and prevent the turkey from drying out.

Step 6

Melt the unsalted butter in a small saucepan or microwave. Brush the melted butter evenly over the turkey skin, then drizzle the olive oil on top for extra crispiness.

Step 7

Place the turkey breast-side up on a roasting rack inside the roasting pan. Ensure that the turkey does not sit directly in the liquid.

Step 8

Roast the turkey in the preheated oven, uncovered, for approximately 15 minutes per pound (about 3 hours for a 12-pound turkey) or until the internal temperature in the thickest part of the breast reaches 165°F (74°C).

Step 9

Halfway through cooking, check if the skin is browning too quickly. If so, tent the turkey loosely with aluminum foil to prevent over-browning.

Step 10

Once fully cooked, remove the turkey from the oven and let it rest for 20-30 minutes to allow the juices to redistribute.

Step 11

Carve and serve your turkey alongside the roasted vegetables and pan drippings. Enjoy!
