Ingredients

  • 2 large Avocados
  • 4 medium Tomatillos
  • 2 Serrano peppers
  • 2 Garlic cloves
  • 0.5 cup Fresh cilantro
  • 2 tablespoons Lime juice
  • 1 teaspoon Salt
  • 0.25 cup Water
  • 1 tablespoon Vegetable oil

Directions

Step 1

Peel and rinse the tomatillos to remove their sticky coating. Place them in a small pot with enough water to cover, and bring to a boil over medium-high heat. Boil for 4-5 minutes, or until the tomatillos turn pale green and soften slightly. Drain and let cool.

Step 2

While the tomatillos are cooling, prepare the serrano peppers by cutting off the stems. For a milder sauce, remove the seeds; for a spicier result, leave them intact.

Step 3

Cut the avocados in half, remove the pits, and scoop out the flesh into a blender or food processor.

Step 4

Add the boiled tomatillos, serrano peppers, garlic cloves, fresh cilantro, lime juice, salt, and water to the blender with the avocados.

Step 5

Blend the mixture on high speed until smooth and creamy. If the sauce is too thick, add a little more water, 1 tablespoon at a time, until desired consistency is reached.

Step 6

Heat vegetable oil in a small skillet or saucepan over medium heat. Pour the blended sauce into the skillet, stirring gently. Simmer for 2-3 minutes to enhance the flavor, then remove from heat.

Step 7

Let the sauce cool completely before transferring it to a serving dish or airtight container. Serve immediately or refrigerate for up to 3 days.
