Ingredients

  • 6 medium Russet potatoes
  • 4 tablespoons Unsalted butter
  • 3 tablespoons All-purpose flour
  • 2 cups Whole milk
  • 2 cups Cheddar cheese, shredded
  • 1 cup Sour cream
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 0.5 teaspoon Onion powder
  • 0.5 cup Breadcrumbs (optional)
  • 0.25 cup Parmesan cheese, grated (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish with butter or cooking spray.

Step 2

Peel the potatoes and slice them into thin, even rounds (about 1/8-inch thick) using a knife or mandoline slicer.

Step 3

Place the potato slices in a large pot, cover them with cold water, and add a pinch of salt. Bring to a boil over medium-high heat and cook for 5 minutes, then drain and set aside.

Step 4

In a medium saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute, whisking constantly, to form a roux.

Step 5

Gradually pour in the milk while whisking to ensure there are no lumps. Cook for 3-4 minutes, stirring often, until the sauce thickens.

Step 6

Turn off the heat and stir in 1 1/2 cups of the shredded cheddar cheese until melted. Add the sour cream, salt, black pepper, garlic powder, and onion powder. Mix well to combine.

Step 7

Layer half of the potato slices in the prepared baking dish. Pour half of the cheese sauce over the potatoes, spreading evenly. Repeat with the remaining potato slices and sauce.

Step 8

Sprinkle the remaining shredded cheddar cheese over the top. If desired, mix the breadcrumbs and Parmesan cheese in a small bowl and sprinkle the mixture over the casserole for a crispy topping.

Step 9

Cover the baking dish with aluminum foil and bake for 30 minutes. Then, remove the foil and bake for an additional 15 minutes, or until the top is golden and bubbly.

Step 10

Let the casserole rest for 5-10 minutes before serving. Enjoy!
