Ingredients

  • 3 cups rolled oats
  • 1 cup raw almonds, chopped
  • 1 cup unsweetened shredded coconut

  • 2 tablespoons chia seeds
  • 1 teaspoon cinnamon
  • 0.5 teaspoon salt
  • 0.25 cup coconut oil, melted
  • 0.25 cup maple syrup or honey
  • 1 teaspoon vanilla extract
  • 0.5 cup dried cranberries or raisins (optional)
  • 0.25 cup dark chocolate chips (optional, added after baking)

Directions

Step 1

Preheat your oven to 325°F (165°C) and line a large baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the rolled oats, chopped almonds, shredded coconut, pumpkin seeds, chia seeds, cinnamon, and salt. Mix until all the dry ingredients are evenly combined.

In a small bowl, whisk together the melted coconut oil, maple syrup (or honey), and vanilla extract.

Pour the wet ingredients over the dry ingredients and stir thoroughly until everything is well coated.
