  • 2 cups Cherry tomatoes
  • 1 large Bell pepper (red, yellow, or orange)
  • 1 small Red onion
  • 0.5 cup Fresh parsley
  • 0.25 cup Fresh basil
  • 0.25 cup Olive oil
  • 2 tablespoons Red wine vinegar
  • 1 teaspoon Honey
  • 1 clove Garlic
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Wash all the vegetables thoroughly and pat them dry.

Step 2

Slice the cucumbers into thin rounds. If using large cucumbers, you can cut the rounds in half for bite-sized pieces.

Step 3

Halve the cherry tomatoes.

Step 4

Deseed and thinly slice the bell pepper into strips.

Step 5

Peel and thinly slice the red onion into rings or half-rings.

Step 6

Chop the fresh parsley and basil finely.

Step 7

In a small bowl, prepare the marinade by whisking together olive oil, red wine vinegar, honey, minced garlic, salt, and black pepper.

Step 8

In a large mixing bowl, combine the cucumbers, cherry tomatoes, bell pepper, red onion, chopped parsley, and basil.

Step 9

Pour the marinade over the vegetables and herbs, and toss well to ensure everything is evenly coated.

Step 10

Cover the bowl with plastic wrap or transfer the salad to an airtight container and refrigerate for at least 30 minutes to allow the flavors to meld.

Step 11

Give the salad a good toss before serving. Enjoy it fresh as a standalone dish or paired with grilled meats or crusty bread.
