Ingredients

  • 2 cups rolled oats
  • 0.5 cups almond flour
  • 2 tablespoons chia seeds
  • 1 teaspoon baking powder
  • 0.5 teaspoons ground cinnamon
  • 0.25 teaspoon salt
  • 0.5 cups almond butter
  • 0.5 cups pure maple syrup
  • 1 teaspoon vanilla extract
  • 0.5 cups dark chocolate chips
  • 0.25 cups dried cranberries (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the rolled oats, almond flour, chia seeds, baking powder, ground cinnamon, and salt. Mix well to ensure even distribution of the dry ingredients.

Step 3

In a separate bowl, whisk together the almond butter, pure maple syrup, and vanilla extract until smooth and creamy.

Step 4

Pour the wet mixture into the dry mixture and stir until a dough forms. The dough should be slightly sticky but hold its shape.

Step 5

Fold in the dark chocolate chips and dried cranberries (if using).

Step 6

Using a tablespoon or small cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten each cookie slightly with the back of a spoon or your fingers.

Step 7

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.

Step 8

Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Serve and enjoy! These cookies can be stored in an airtight container at room temperature for up to 5 days or in the refrigerator for up to a week.
