Ingredients

  • 2 cups Sushi rice
  • 2.5 cups Water
  • 1 cup Rice vinegar
  • 2 tablespoons Sugar
  • 1 tablespoon Salt
  • 0.75 pound Fresh tuna or salmon
  • 2 teaspoons Wasabi paste
  • 0.25 cup Soy sauce

Directions

Step 1

Rinse the sushi rice under cold water until the water runs clear to remove excess starch.

Step 2

Combine rinsed rice and 2.5 cups of water in a rice cooker. Cook according to the rice cooker's instructions.

Step 3

While the rice is cooking, prepare the sushi vinegar by combining rice vinegar, sugar, and salt in a small saucepan over low heat. Stir until sugar and salt are dissolved. Do not boil. Let it cool to room temperature.

Step 4

Once the rice is cooked, transfer it to a large wooden or glass bowl. Gradually add the sushi vinegar to the rice, cutting and folding the rice gently with a spatula to evenly distribute the vinegar without mashing the grains.

Step 5

Cover the rice with a damp cloth and let it cool to room temperature.

Slice the fish into thin pieces approximately 2 inches long and 3/4 inch wide. The slices should be about 1/4 inch thick.

Step 7

Wet your hands with water to prevent sticking, and take a small amount of rice (about 1-2 tablespoons) and shape it into an oval.

Spread a small amount of wasabi paste on one side of the fish slice, then press the fish, wasabi side down, onto the rice oval. Gently squeeze the fish and rice together.

Repeat until all rice and fish are used.
