Ingredients

  • 300 g Yellow split peas
  • 1 medium Onion
  • 1 medium Carrot
  • 1 Celery stalk
  • 2 Garlic cloves
  • 2 tablespoons Olive oil
  • 1.5 liters Chicken or vegetable stock
  • 2 Bay leaves
  • 6 Frankfurters
  • 0 to taste Salt
  • 0 to taste Black pepper

Directions

Step 1

Rinse the yellow split peas under cold running water and set aside.

Step 2

Peel the onion, carrot, and garlic. Chop the onion and carrot finely, and crush the garlic.

Step 3

Dice the celery stalk into small pieces.

Step 4

In a large pot, heat the olive oil over medium heat.

Step 5

Add the chopped onion, carrot, celery, and garlic to the pot. Sauté for about 5 minutes, stirring occasionally, until the vegetables are softened but not browned.

Add the rinsed yellow split peas to the pot, followed by the chicken or vegetable stock and bay leaves.
