Ingredients

  • 4 large caps Portobello mushrooms
  • 3 tablespoons Olive oil
  • 2 tablespoons Butter
  • 1 large, thinly sliced Yellow onion
  • 1 medium, thinly sliced Green bell pepper
  • 2 minced Garlic cloves
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 4 slices Provolone cheese
  • 4 Sub rolls
  • 4 tablespoons (optional) Mayonnaise

Directions

Step 1

Clean the portobello mushroom caps with a damp paper towel. Remove the stems and use a spoon to gently scrape out the gills. Slice the mushrooms into thick strips.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the mushroom slices and cook for 5-6 minutes, stirring occasionally, until they are browned and tender. Transfer the mushrooms to a plate and set aside.

Step 3

In the same skillet, add 1 tablespoon of olive oil and 2 tablespoons of butter. Once the butter is melted, add the sliced onion and green bell pepper. Cook for 8-10 minutes, stirring occasionally, until the vegetables are softened and lightly caramelized.

Add the minced garlic to the skillet and cook for 1 minute, until fragrant.
