Ingredients

  • 4 cups Chicken stock (preferably homemade)
  • 1 inch piece Fresh ginger, thinly sliced
  • 2 cloves Garlic cloves, thinly sliced
  • 2 tablespoons Soy sauce
  • 1 tablespoon Fish sauce
  • 4 ounces Rice noodles
  • 1 cup Cooked shredded chicken (optional)
  • 2 cups Baby spinach leaves
  • 2 stalks Green onions, thinly sliced
  • 0.25 cup Fresh cilantro leaves (optional)
  • 1 piece Red chili, finely sliced (optional)
  • 1 piece Lime, cut into wedges

Directions

Step 1

In a medium-sized pot, pour in the chicken stock and bring it to a gentle boil over medium heat.

Step 2

Add the sliced ginger and garlic to the pot. Let them simmer for 5 minutes to infuse the stock with flavor.

Step 3

Stir in the soy sauce and fish sauce. Taste the broth and adjust seasoning if needed.

Step 4

While the broth simmers, cook the rice noodles according to the package instructions. Drain and set aside.

Step 5

Optional: If adding shredded chicken, warm it up in the broth for 2-3 minutes.

Step 6

Divide the cooked noodles evenly between two serving bowls.

Step 7

Add a handful of baby spinach leaves to each bowl, followed by ladling the hot broth over the noodles and spinach. The heat will wilt the spinach.

Step 8

Top each bowl with sliced green onions, fresh cilantro leaves, and red chili (if using).

Step 9

Serve with lime wedges on the side for squeezing over the soup just before eating.
