In a large mixing bowl, cream together the softened butter and caster sugar using a hand mixer or stand mixer until light and fluffy.
Add the egg and vanilla extract to the butter mixture and mix until fully combined.
In a separate bowl, whisk together the plain flour, baking powder, and salt to combine.
Gradually add the dry ingredients to the wet ingredients, mixing until the dough starts to come together. If the dough is too sticky, add a little more flour, 1 tablespoon at a time, until manageable.
Shape the dough into two discs, wrap them individually in plastic wrap, and refrigerate for at least 1 hour, or until firm enough to roll out.
Preheat your oven to 180°C (350°F) and line baking trays with parchment paper.
On a lightly floured surface, roll out one disc of dough to a thickness of about 5mm (1/4 inch). Keep the other disc refrigerated until ready to use.
Cut out shapes using cookie cutters, then transfer the shapes to the lined baking trays, spacing them about 1-2 cm apart.
Repeat the rolling and cutting process with the remaining dough, gathering and re-rolling scraps as needed.
Bake the cookies in the preheated oven for 8-10 minutes, or until they are lightly golden around the edges. Keep a close eye on them to avoid overbaking.
Allow the cookies to cool on the baking trays for 5 minutes, then transfer them to a wire rack to cool completely.
