Ingredients

  • 175 grams Unsalted butter (softened)
  • 200 grams Caster sugar
  • 1 unit Large egg
  • 2 teaspoons Vanilla extract
  • 400 grams Plain flour (all-purpose)
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt

Directions

Step 1

In a large mixing bowl, cream together the softened butter and caster sugar using a hand mixer or stand mixer until light and fluffy.

Step 2

Add the egg and vanilla extract to the butter mixture and mix until fully combined.

Step 3

In a separate bowl, whisk together the plain flour, baking powder, and salt to combine.

Step 4

Gradually add the dry ingredients to the wet ingredients, mixing until the dough starts to come together. If the dough is too sticky, add a little more flour, 1 tablespoon at a time, until manageable.

Shape the dough into two discs, wrap them individually in plastic wrap, and refrigerate for at least 1 hour, or until firm enough to roll out.
