Ingredients

  • 4 pieces Large flour tortillas
  • 200 grams Shredded cheddar cheese
  • 100 grams Cream cheese
  • 250 grams Cooked chicken, shredded
  • 120 grams Canned black beans, rinsed and drained
  • 1 piece Red chili, finely chopped
  • 2 tablespoons Fresh coriander (cilantro), chopped
  • 1 tablespoon Olive oil
  • 120 ml Sour cream
  • 1 piece Lime, for juicing
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper

Directions

Step 1

In a medium mixing bowl, combine the shredded cheddar cheese, cream cheese, shredded cooked chicken, black beans, red chili, and fresh coriander.

Step 2

Add salt and black pepper to the mixture and stir until evenly combined.

Step 3

Lay two flour tortillas flat on a clean surface. Spread the filling mixture evenly across the tortillas, leaving about a 1 cm border around the edges.

Place a second tortilla on top of each filled tortilla, pressing gently to seal.

Heat a large non-stick skillet over medium heat and lightly grease with olive oil.
