Ingredients

  • 8 ounces rotini pasta
  • 2 cans (5 ounces each) canned tuna in water, drained
  • 1 cup frozen peas
  • 1 cup shredded cheddar cheese
  • 1 can (10.5 ounces) cream of mushroom soup
  • 1 cup milk
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 cup panko breadcrumbs
  • 2 tablespoons butter, melted
  • 0 cooking spray

Directions

Step 1

Preheat the oven to 375°F (190°C). Lightly spray a 12-cup muffin tin with cooking spray to prepare individual servings.

Step 2

Cook the rotini pasta according to the package instructions until al dente. Drain and set aside.

Step 3

In a large bowl, mix the drained tuna, frozen peas, shredded cheddar cheese, cream of mushroom soup, milk, onion powder, garlic powder, salt, and black pepper. Stir until the mixture is well combined.

Step 4

Fold the cooked pasta into the tuna mixture until evenly coated.

Step 5

Spoon the mixture evenly into the prepared muffin tin cups, pressing down slightly to pack each portion.

Step 6

In a small bowl, mix the panko breadcrumbs with the melted butter until the crumbs are moistened. Sprinkle the breadcrumb mixture evenly over the top of each muffin cup.

Step 7

Bake in the preheated oven for 20–25 minutes, or until the tops are golden brown and the casserole is bubbling around the edges.

Step 8

Let the casserole cups cool in the pan for 5–10 minutes, then carefully run a knife around the edges and lift them out.

Step 9

Serve warm, or allow to cool completely before storing in an airtight container in the refrigerator for up to 3 days.
