Ingredients

  • 1 can (5 oz) Canned tuna (drained)
  • 1 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Ground black pepper
  • 2 whole Eggs (large)
  • 0.5 cup Milk
  • 2 tablespoons Mayonnaise
  • 0.75 cup Cheddar cheese (shredded)
  • 2 stalks Green onions (finely chopped)
  • 0.5 teaspoon Lemon zest
  • 0.25 teaspoon Paprika (optional, for garnish)

Directions

Step 1

Preheat your oven to 375°F (190°C) and grease a standard 12-cup muffin tin or line it with paper liners.

Step 2

In a large mixing bowl, whisk together the flour, baking powder, salt, and ground black pepper.

Step 3

In a separate medium bowl, beat the eggs lightly. Whisk in the milk and mayonnaise until combined.

Step 4

Drain the canned tuna thoroughly and flake it gently with a fork. Add the tuna, shredded cheddar cheese, chopped green onions, and lemon zest to the wet ingredients. Mix until evenly distributed.

Step 5

Gradually pour the wet mixture into the bowl with the dry ingredients. Stir gently with a spatula or wooden spoon until just combined. Be careful not to overmix—the batter will be lumpy.

Step 6

Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.

Step 7

If desired, sprinkle a pinch of paprika on top of each muffin for added color and flavor.

Step 8

Bake in the preheated oven for 18-20 minutes, or until the muffins are golden on top and a toothpick inserted into the center comes out clean.

Step 9

Remove the muffins from the oven and let them cool in the pan for 5 minutes. Then, transfer them to a wire rack to cool completely.

Step 10

Serve warm or at room temperature. These muffins can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 1 month.
