Directions

Step 1

Peel the potatoes and cut them into thin slices, about 1/8-inch thick. Peel and finely dice the onion.

Heat 2 tablespoons of olive oil in a non-stick or cast-iron skillet over medium heat. Add the potato slices and onion to the skillet. Stir occasionally and cook until the potatoes are tender and golden, about 10-12 minutes. Avoid letting them brown too much.
