Ingredients

  • 200 grams spaghetti
  • 12 pieces large shrimp, peeled and deveined
  • 150 grams baby bella mushrooms, sliced
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 0.5 teaspoons red chili flakes
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice
  • 2 tablespoons parmesan cheese, grated
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta water before draining and set aside.

Step 2

While the pasta cooks, heat 1 tablespoon of butter and the olive oil in a large skillet over medium heat.

Step 3

Add the shrimp to the skillet. Season lightly with salt and pepper, and cook for about 2 minutes on each side until pink and cooked through. Remove the shrimp from the skillet and set aside.

Step 4

In the same skillet, add another tablespoon of butter. Add the minced garlic, red chili flakes, and sliced mushrooms. Sauté for 5-7 minutes, or until the mushrooms are golden and tender.

Step 5

Return the shrimp to the skillet and toss to combine with the mushrooms.

Step 6

Add the cooked spaghetti to the skillet along with the remaining tablespoon of butter, lemon juice, and reserved pasta water (a few tablespoons at a time) to create a light sauce. Toss everything together until the pasta is evenly coated.

Step 7

Stir in the chopped parsley and adjust seasoning with salt and black pepper as needed.

Step 8

Serve immediately, garnished with freshly grated parmesan cheese and extra parsley if desired.
