Step 1

If using fresh strawberries, rinse them thoroughly, hull the stems, and chop them into halves or quarters. If using frozen strawberries, there's no need to thaw them ahead of time.

Step 2

In a medium-sized saucepan, combine the strawberries, granulated sugar, lemon juice, and water. Stir to evenly coat the strawberries.

Step 3

Place the saucepan over medium heat and bring the mixture to a gentle simmer. Cook for 5-7 minutes, stirring occasionally, until the strawberries soften and release juices.

Step 4

In a small bowl, mix the cornstarch with 1 tablespoon of water to create a smooth slurry. Gradually pour the slurry into the simmering strawberry mixture while stirring constantly.
