Ingredients

  • 250 grams pappardelle pasta
  • 2 tablespoons unsalted butter
  • 80 grams Parmesan cheese, freshly grated
  • 100 milliliters heavy cream
  • 1 clove garlic, finely minced
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper, freshly ground
  • 1 tablespoon fresh parsley, chopped (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the pappardelle pasta and cook according to the package instructions until al dente. Reserve 1 cup of pasta water before draining.

Step 2

In a large skillet, melt the unsalted butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, being careful not to burn the garlic.

Step 3

Lower the heat to medium-low and stir in the heavy cream. Let it warm through for 2-3 minutes, stirring occasionally.

Step 4

Gradually whisk in the freshly grated Parmesan cheese, allowing it to melt and create a smooth sauce. If the sauce is too thick, add a small amount of the reserved pasta water to loosen it.

Step 5

Season the sauce with salt and freshly ground black pepper to taste.

Step 6

Add the cooked pappardelle to the skillet, tossing gently to coat the pasta evenly with the sauce.

Step 7

Remove from heat and sprinkle with freshly chopped parsley, if using, for a burst of color and freshness.

Step 8

Serve immediately in warm bowls, garnished with extra Parmesan, if desired.
