Ingredients

  • 1 pound Cremini or button mushrooms
  • 2 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 2 cloves Garlic cloves, minced
  • 0.25 cup Dry sherry
  • 1 teaspoon Fresh thyme leaves
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Freshly ground black pepper
  • 1 tablespoon Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

Clean the mushrooms by gently wiping them with a damp paper towel or brushing off any debris with a soft brush. Trim the stems if needed and slice the mushrooms if they are large, or leave them whole for a more rustic presentation.

Step 2

Heat a large skillet over medium heat. Add the butter and olive oil to the skillet, allowing the butter to melt and the mixture to become hot and slightly foamy.

Step 3

Add the mushrooms to the skillet in a single layer. Cook for 5-6 minutes, stirring occasionally, until the mushrooms begin to release their moisture and start to brown.

Step 4

Add the minced garlic to the skillet and stir well. Cook for an additional 1 minute, making sure the garlic doesn’t burn.

Step 5

Pour the dry sherry into the skillet and stir to deglaze any browned bits from the bottom of the pan. Continue cooking for 2-3 minutes, allowing the sherry to reduce slightly and infuse the mushrooms with its flavor.

Step 6

Sprinkle in the fresh thyme leaves, salt, and black pepper. Stir to combine and cook for another 2-3 minutes until the liquid has mostly evaporated and the mushrooms are tender and caramelized.

Step 7

Remove the skillet from heat. Taste the mushrooms and adjust the seasoning if needed. Garnish with chopped fresh parsley if desired.

Step 8

Serve warm as a side dish, over steak, or on toasted bread as an appetizer.
