Ingredients

  • 1.5 cups long-grain white rice
  • 3 cups water
  • 1 medium (diced) red bell pepper
  • 1 medium (diced) yellow bell pepper
  • 1 medium (diced) green bell pepper
  • 1 small (finely chopped) onion
  • 2 (minced) garlic cloves
  • 3 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1.5 cups chicken or vegetable broth
  • 1 teaspoon ground cumin
  • 0.5 teaspoons paprika
  • 1 teaspoon (or to taste) salt
  • 0.5 teaspoons (or to taste) black pepper
  • 2 tablespoons (chopped) fresh parsley
  • 1 tablespoon lemon juice

Directions

Step 1

Rinse the rice under cold water until the water runs clear. Set aside.

Step 2

Heat a large skillet or saucepan over medium heat. Add 1 tablespoon of butter and olive oil.

Step 3

Once melted, sauté the chopped onion for 2-3 minutes until softened and translucent.

Step 4

Add the minced garlic, diced red bell pepper, yellow bell pepper, and green bell pepper. Cook for 5 minutes, stirring occasionally, until the peppers begin to soften.

Step 5

Stir in the ground cumin, paprika, salt, and black pepper. Toast the spices for 30 seconds to release their aromas.

Step 6

Add the rinsed rice to the skillet and toast for 2 minutes, stirring frequently, until the grains are slightly translucent.

Step 7

Pour in the chicken or vegetable broth along with the water. Stir to combine, then bring the mixture to a boil.

Step 8

Reduce the heat to low and cover the skillet with a tight-fitting lid. Simmer for 15-18 minutes, or until the rice has absorbed all the liquid.

Step 9

Turn off the heat and let the rice sit, covered, for 5 minutes. This will help steam the rice and make it fluffy.

Step 10

Fluff the rice with a fork, then stir in the remaining 2 tablespoons of butter, chopped parsley, and lemon juice.

Step 11

Taste and adjust seasoning with additional salt, pepper, or lemon juice if needed.

Step 12

Serve warm as a vibrant side dish or enjoy as a light, flavorful main dish.
