Ingredients

  • 1.5 cups Jasmine rice
  • 3 cups Water
  • 1.5 cups Pineapple chunks (fresh or canned, drained)
  • 2 tablespoons Unsalted butter
  • 1 medium Yellow onion, diced
  • 2 cloves Garlic cloves, minced
  • 2 tablespoons Soy sauce
  • 1 teaspoon Sesame oil
  • 2 stalks Green onions, sliced
  • 0.25 cup Cashews (optional, for garnish)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Rinse the jasmine rice under cold water until the water runs clear to remove excess starch.

Step 2

In a medium-sized pot, add the rinsed rice and water, and bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover with a lid, and let it simmer for 15 minutes or until the rice is fully cooked. Remove from heat and let it rest, covered, for 5 minutes.

Step 3

While the rice is cooking, melt the butter in a large skillet over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.

Step 4

Add the minced garlic to the skillet and cook for 1 minute, stirring frequently to avoid burning.

Step 5

Stir in the pineapple chunks and cook for 2-3 minutes, allowing the pineapple to caramelize slightly for added flavor.

Step 6

Add the cooked rice to the skillet and mix well. Cook for 2-3 minutes, stirring frequently, to combine the flavors.

Step 7

Pour in the soy sauce and sesame oil. Stir well to evenly coat the rice mixture.

Step 8

Season with salt and black pepper. Taste and adjust seasoning as needed.

Step 9

Remove from heat and garnish with sliced green onions and cashews if desired for added crunch.

Step 10

Serve warm as a side dish or a main course. Enjoy your tropical twist on rice!
