Ingredients

  • 1.5 cups All-purpose flour
  • 1.5 teaspoons Baking powder
  • 0.5 teaspoons Baking soda
  • 0.25 teaspoons Salt
  • 3 medium Bananas (well-mashed, ripe)
  • 0.5 cups Creamy peanut butter
  • 0.25 cups Unsalted butter (melted and slightly cooled)
  • 0.5 cups Granulated sugar
  • 0.25 cups Brown sugar (packed)
  • 1 large Egg
  • 1 teaspoons Vanilla extract
  • 0.25 cups Milk
  • 0.5 cups Optional: Chocolate chips or chopped nuts

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a standard 12-cup muffin tin with paper liners, or lightly grease the tin.

Step 2

In a medium bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Set aside.

Step 3

In a large mixing bowl, mash the ripe bananas until smooth. Stir in the creamy peanut butter and melted butter until well combined.

Step 4

Add the granulated sugar, brown sugar, egg, and vanilla extract to the banana mixture. Mix until smooth.

Step 5

Gradually fold the dry ingredients into the wet mixture, alternating with the milk. Stir until just combined. Be careful not to overmix to ensure tender muffins.

Step 6

If desired, gently fold in the chocolate chips or chopped nuts.

Step 7

Divide the batter evenly among the 12 muffin cups, filling each about 3/4 full.

Step 8

Bake in the preheated oven for 16-18 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 9

Remove the muffins from the oven and allow them to cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Enjoy these muffins warm or at room temperature. Store leftovers in an airtight container for up to 3 days.
