Rinse the basmati rice under cold water until the water runs clear. Cook the rice according to the package instructions. Once cooked, fluff with a fork and set aside.
Place the smoked haddock fillets in a large, shallow saucepan and pour the milk over them. Bring to a gentle simmer, then cover and cook for 8–10 minutes or until the fish is cooked through and flakes easily. Remove the fillets from the milk and set aside. Reserve the cooking milk.
Melt the butter in a large frying pan or skillet over medium heat. Add the finely chopped onion and sauté for 5–7 minutes until soft and translucent.
