Ingredients

  • 2 cups All-purpose flour
  • 2 teaspoons Baking powder
  • 0.5 teaspoons Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoons Salt
  • 2 medium Ripe bananas
  • 1 cup Shredded carrots
  • 0.5 cup Granulated sugar
  • 0.25 cup Brown sugar, packed
  • 0.5 cup Vegetable oil
  • 2 pieces Large eggs
  • 1 teaspoon Vanilla extract
  • 0.5 cup Chopped walnuts or pecans (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and lightly grease or line a jumbo muffin tin with 6 paper liners.

Step 2

In a large mixing bowl, whisk together the flour, baking powder, baking soda, ground cinnamon, and salt. Set aside.

Step 3

In a medium bowl, mash the ripe bananas until smooth. Add the shredded carrots, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Mix well until fully incorporated.

Step 4

Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Be careful not to overmix to maintain fluffy muffins.

Step 5

If using, fold in the chopped walnuts or pecans for added texture and flavor.

Step 6

Divide the batter evenly among the 6 prepared jumbo muffin cups, filling each about 3/4 of the way full.

Step 7

Bake in the preheated oven for 22-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.

Step 8

Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Serve warm or at room temperature. These muffins can be stored in an airtight container at room temperature for up to 3 days or in the refrigerator for up to a week.
