Ingredients

  • 1 pound Lean ground beef
  • 1 tablespoon Olive oil
  • 1 Yellow onion, diced
  • 1 Red bell pepper, diced
  • 3 cloves Garlic, minced
  • 1 teaspoon Chili powder
  • 1 teaspoon Ground cumin
  • 0.5 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 1 cup Black beans, rinsed and drained
  • 1 cup Corn, kernels (fresh, frozen, or canned)
  • 1 cup Diced tomatoes, drained
  • 1 cup Shredded reduced-fat cheddar cheese
  • 6 Whole wheat tortillas
  • 1 unit Cooking spray
  • 1 optional Optional toppings: Greek yogurt, salsa, chopped cilantro

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a large baking dish with cooking spray and set it aside.

Step 2

Heat olive oil in a large skillet over medium heat. Add the diced onion and red bell pepper, and sauté for 4-5 minutes until softened.

Step 3

Add the minced garlic to the skillet and cook for an additional 1-2 minutes until fragrant.

Step 4

Increase the heat to medium-high and add the ground beef. Cook until browned and fully cooked, breaking it apart with a spoon as it cooks, about 5-7 minutes.

Stir in the chili powder, cumin, paprika, and salt, mixing well to coat the beef and vegetables evenly.

Add the black beans, corn, and diced tomatoes to the skillet. Stir well and cook for 3-4 minutes, allowing the flavors to combine.

Remove the skillet from heat and let the filling cool slightly. Stir in 1/2 cup of the shredded cheese.

Lay one tortilla flat on a clean surface. Spoon approximately 2/3 cup of the filling onto the center of the tortilla. Fold in the sides and roll the tortilla tightly into a burrito. Repeat with the remaining tortillas and filling.

Place the burritos seam-side down in the prepared baking dish. Lightly spray the tops with cooking spray.

Remove the burritos from the oven and sprinkle the remaining 1/2 cup of shredded cheese over the top. Return to the oven for an additional 2-3 minutes, until the cheese is melted.
