Ingredients

  • 2 pieces Chicken breasts
  • 2 cups Pineapple chunks (fresh or canned)
  • 1 piece Red bell pepper
  • 1 piece Red onion
  • 0.25 cups Soy sauce
  • 0.25 cups Pineapple juice
  • 2 tablespoons Brown sugar
  • 2 tablespoons Honey
  • 1 tablespoon Sesame oil
  • 2 cloves Minced garlic
  • 1 teaspoon Grated ginger
  • 0.5 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 8 pieces Wooden skewers (soaked in water for 30 minutes)

Directions

Step 1

Cut the chicken breasts into 1-inch cubes and set aside.

Step 2

In a mixing bowl, whisk together soy sauce, pineapple juice, brown sugar, honey, sesame oil, minced garlic, grated ginger, salt, and black pepper to create the marinade.

Step 3

Reserve 1/4 cup of the marinade for basting later. Place the chicken cubes in the remaining marinade, cover, and refrigerate for at least 1 hour (up to 4 hours for deeper flavor).

Step 4

Cut the red bell pepper and red onion into 1-inch pieces to match the size of the pineapple chunks.

Step 5

Preheat the grill to medium-high heat, approximately 375-400°F (190-200°C).

Step 6

Thread the chicken, pineapple chunks, red bell pepper, and red onion onto the soaked wooden skewers, alternating ingredients for colorful skewers.

Step 7

Lightly oil the grill grates to prevent sticking. Place the skewers on the grill and cook for 12-15 minutes, turning every 3-4 minutes, until the chicken is fully cooked and has reached an internal temperature of 165°F (74°C).

Step 8

Brush the reserved marinade onto the skewers during the last 5 minutes of cooking to enhance flavor and create a glossy finish.

Step 9

Remove the skewers from the grill and allow them to rest for 2-3 minutes before serving.

Step 10

Serve the grilled Hawaiian chicken skewers with rice, a side salad, or as a stand-alone dish for a tropical feast.
