Ingredients

  • 4 large Flour tortillas
  • 6 large Eggs
  • 2 tablespoons Milk
  • 0.25 teaspoons Salt
  • 0.25 teaspoons Black pepper
  • 1 tablespoon Butter
  • 1 cup Cooked ham, diced
  • 1.5 cups Cheddar cheese, shredded
  • 2 tablespoons Green onions, chopped
  • 1 tablespoon Vegetable oil or non-stick spray
  • 0.5 cup Salsa (optional, for serving)
  • 0.5 cup Sour cream (optional, for serving)

Directions

Step 1

In a medium bowl, whisk together the eggs, milk, salt, and black pepper until fully combined.

Step 2

Heat a non-stick skillet over medium heat and melt the butter. Pour in the egg mixture and cook, stirring frequently, until the eggs are softly scrambled and just set. Remove from heat.

Step 3

Stir the diced ham and chopped green onions into the scrambled eggs. Set aside.

Heat a large clean skillet or griddle over medium heat. Lightly grease it with vegetable oil or non-stick spray.
