Ingredients

  • 1 pound Beef stew meat
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 tablespoon Olive oil
  • 1 medium Yellow onion, diced
  • 2 large Carrots, peeled and diced
  • 2 stalks Celery stalks, diced
  • 3 cloves Garlic cloves, minced
  • 0.75 cup Pearl barley
  • 6 cups Beef broth
  • 1 14-ounce can Diced tomatoes, canned
  • 1 leaf Bay leaf
  • 1 teaspoon Dried thyme
  • 1 cup Frozen green beans
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Season the beef stew meat with salt and pepper.

Step 2

In a large skillet, heat the olive oil over medium-high heat. Sear the beef for 2–3 minutes per side, or until browned. Work in batches if necessary. Remove beef from the skillet and set aside.

Step 3

In the same skillet, sauté the diced onion, carrots, and celery for 5–6 minutes, or until softened. Add the garlic and cook for 1 minute, stirring frequently. Transfer the vegetables to the crock pot.
