Peel the potatoes and cut them into evenly-sized chunks, about 2 inches wide.
Place the potato chunks in a large pot and cover with cold water. Add 1 teaspoon of kosher salt. Bring to a boil over medium-high heat, then reduce the heat to a simmer.
Cook the potatoes for 15-20 minutes or until they are fork-tender. Drain and return the potatoes to the pot.
While the potatoes are cooking, prepare the leeks. Slice the leeks thinly into rounds and rinse thoroughly under cold water to remove any grit.
