Directions

Step 1

Lay the chicken breast-side down on a clean cutting board.

Using kitchen shears, cut along one side of the backbone from tail to neck. Repeat on the other side to remove the backbone completely. (Save it for stock, if desired.)

Flip the chicken over and press firmly on the breastbone to flatten it. The chicken should now resemble a butterfly shape.
