Ingredients

  • 1 lb Pork tenderloin
  • 1 cup Guinness beer
  • 2 tbsp Olive oil
  • 2 tbsp Soy sauce
  • 2 tbsp Brown sugar
  • 3 cloves Garlic cloves, minced
  • 1 tbsp Dijon mustard
  • 1 tsp Fresh rosemary, chopped
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Directions

Step 1

In a medium bowl, whisk together Guinness beer, olive oil, soy sauce, brown sugar, minced garlic, Dijon mustard, fresh rosemary, salt, and black pepper to create the marinade.

Step 2

Place the pork tenderloin in a resealable plastic bag or a shallow dish. Pour the marinade over the pork, ensuring it is fully coated. Seal the bag (or cover the dish) and refrigerate for at least 2 hours, preferably overnight, for maximum flavor.

Step 3

Preheat your broiler to high and position the oven rack about 6-8 inches from the heat source.

Step 4

Remove the pork tenderloin from the marinade and pat it dry with paper towels. Reserve the marinade for basting.

Step 5

Place the pork tenderloin on a broiler pan or a rack set over a baking sheet to catch drippings.

Step 6

Broil the tenderloin for 12-15 minutes on one side, then flip it over and broil for another 12-15 minutes, basting occasionally with the reserved marinade.

Step 7

Continue broiling until the internal temperature of the pork reaches 145°F (63°C) for medium or 160°F (71°C) for well-done, as measured with a meat thermometer.

Step 8

Remove the pork from the broiler and tent it loosely with aluminum foil. Let it rest for 5-10 minutes to allow the juices to redistribute.

Step 9

Slice the tenderloin into medallions and serve immediately, garnished with additional fresh rosemary if desired. Pair with roasted vegetables or mashed potatoes for a complete meal.
