Ingredients

  • 1.5 cups Basmati rice
  • 3 tablespoons Unsalted butter
  • 2 tablespoons Olive oil
  • 1 medium Yellow onion, finely diced
  • 3 cloves Garlic, minced
  • 1 teaspoon Ground cumin
  • 0.5 teaspoons Ground cinnamon
  • 0.5 teaspoons Ground turmeric
  • 3 cups Chicken or vegetable broth
  • 1 teaspoon Salt
  • 0.25 cups Golden raisins
  • 0.3 cups Slivered almonds, toasted
  • 2 tablespoons Chopped parsley (optional, for garnish)

Directions

Step 1

Rinse the Basmati rice thoroughly in cold water until the water runs clear. Drain and set aside.

Step 2

In a medium saucepan, heat the unsalted butter and olive oil over medium heat until melted and shimmering.

Step 3

Add the diced onion to the pan and sauté for 3-4 minutes, stirring frequently, until soft and translucent.

Step 4

Stir in the minced garlic, ground cumin, cinnamon, and turmeric. Cook for an additional 1 minute to toast the spices.

Step 5

Add the rinsed Basmati rice to the pan. Stir well, ensuring the rice is evenly coated with the butter and spices.

Step 6

Pour in the chicken or vegetable broth and season with salt. Stir to combine.

Step 7

Raise the heat to high and bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pan with a tight-fitting lid, and simmer for 15 minutes.

Step 8

After 15 minutes, remove the pan from heat. Gently lift the lid and scatter the golden raisins over the rice. Cover again and let the rice sit for 5-10 minutes to steam and allow the raisins to soften.

Step 9

Fluff the rice gently with a fork, incorporating the raisins. Sprinkle the toasted slivered almonds over the top.

Step 10

Garnish with chopped parsley if desired before serving. Serve warm as a flavorful side dish or accompaniment to your favorite main course.
