Ingredients

  • 2 pieces large eggs
  • 1 whole avocado
  • 1 large flour tortilla
  • 1 handful baby spinach
  • 4 pieces cherry tomatoes
  • 2 tablespoons shredded cheese (cheddar or mozzarella)
  • 1 teaspoon olive oil
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 teaspoon hot sauce (optional)

Directions

Step 1

Crack the eggs into a bowl, add the salt and black pepper, and whisk until well combined.

Heat the olive oil in a non-stick skillet over medium heat.

Pour the whisked eggs into the skillet and cook, gently stirring with a spatula, until scrambled and cooked through. Remove from heat and set aside.
