Ingredients

  • 4 tablespoons Unsalted butter
  • 1 large Yellow onion, finely chopped
  • 3 stalks Celery, finely diced
  • 2 cloves Garlic, minced
  • 10 cups Day-old bread, cubed (sourdough, French, or whole wheat)
  • 2.5 cups Chicken or vegetable broth
  • 1 teaspoon Dried sage
  • 1 teaspoon Dried thyme
  • 1 teaspoon Poultry seasoning
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 tablespoons Fresh parsley, finely chopped
  • 2 large Eggs, lightly beaten

Directions

Step 1

Heat a large skillet over medium heat. Melt the butter, then add the chopped onion and diced celery. Sauté for 5–7 minutes, or until softened. Add the minced garlic and cook for an additional 1 minute. Remove from heat and set aside.

Step 2

In a large mixing bowl, combine the cubed bread, cooked onion mixture, and dried herbs (sage, thyme, and poultry seasoning). Mix thoroughly.

Step 3

In a separate bowl, whisk the chicken or vegetable broth, eggs, salt, and black pepper until well combined.

Step 4

Pour the broth and egg mixture over the bread mixture. Gently toss until all of the bread cubes are evenly moistened but not soggy. Fold in the fresh parsley.

Step 5

Lightly grease the inside of the crock pot with a little butter or non-stick spray. Transfer the stuffing mixture into the crock pot and spread it out evenly.

Step 6

Cover the crock pot with its lid and set it to low heat. Cook for 4 hours, checking occasionally to ensure it doesn’t dry out. If needed, add a small amount of broth (1–2 tablespoons) during cooking to maintain moisture.

Step 7

When the stuffing is cooked through and has a slightly crisp top, turn off the crock pot. Serve warm as a side dish or alongside your favorite roast or holiday meal.
